Crock Pot Mexican Chicken Soup



This Crock Pot Mexican Chicken Soup is a hearty and flavorful dish perfect for busy days. With simple ingredients and easy preparation, it's a satisfying meal the whole family will love.

Ingredients:

  • 1 lb boneless, skinless chicken breasts, diced
  • 1 can 14
  • 5 oz diced tomatoes
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz corn kernels, drained
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeno pepper, seeded and diced
  • 1 red bell pepper, diced
  • 1 cup chicken broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Juice of 1 lime
  • Optional toppings: chopped cilantro, shredded cheese, avocado slices, sour cream

Instructions:

Cut up chicken, tomatoes, black beans, corn, onion, garlic, jalapeo pepper, red bell pepper, chicken broth, chili powder, cumin, paprika, salt, and pepper

Put them all in a slow cooker

Mix everything together by stirring

Turn the heat to low and cover

Cook for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is done and the flavors are well mixed

Add the lime juice right before you serve

If you want, you can serve it hot and top it with chopped cilantro, shredded cheese, avocado slices, and sour cream
