Ingredients:
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- For the Filling:
- 1/2 cup unsalted butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup marshmallow fluff
Instructions:
Preheat the oven to 350F 175C
Line a baking sheet with parchment paper
In a bowl, whisk together flour, cocoa powder, baking soda, and salt
In another bowl, cream together butter and granulated sugar until light and fluffy
Beat in the egg and vanilla extract until well combined
Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk
Mix until just combined
Drop spoonfuls of batter onto the prepared baking sheet, leaving space between each for spreading
Bake in the preheated oven for about 10-12 minutes, or until the cookies spring back when lightly touched
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
For the filling, beat together butter, powdered sugar, and vanilla extract until smooth and creamy
Fold in marshmallow fluff until the filling is light and fluffy
Once the cookies are completely cooled, spread a generous amount of filling onto the flat side of one cookie and sandwich with another cookie
Repeat with the remaining cookies and filling
Serve and enjoy these classic whoopie pie cookies!
