This tangy rosemary roasted chicken recipe combines the flavors of balsamic vinegar, honey, garlic, and fresh rosemary to create a deliciously flavorful marinade. The chicken thighs are roasted until golden brown, resulting in tender and juicy meat with a hint of tanginess and aromatic rosemary.
Ingredients:
- 4 chicken thighs, bone-in, skin-on
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- Salt and pepper to taste
Instructions:
Before you start cooking, heat the oven to 375F 190C
Put honey, minced garlic, chopped rosemary, salt, and pepper in a small bowl
Add the olive oil and mix them all together
Put the chicken thighs in a shallow dish
Pour the marinade over the chicken thighs, making sure they are covered all over
Put it in the fridge for at least 30 minutes to marinate
Place the chicken thighs skin side up on a baking sheet that has been lined with parchment paper
Roast the chicken in a hot oven for 35 to 40 minutes, basting it with the marinade every now and then, until it's fully cooked and golden brown
After cooking, take it out of the oven and let it cool down for a few minutes
